You need a simple, hearty dinner for a busy night. This Cheesy Chicken and Rice Casserole is a one-dish wonder. It combines tender chicken, creamy rice, and plenty of melted cheese for a satisfying, family-favorite meal.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup uncooked long-grain white rice
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup milk
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup frozen broccoli florets (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, uncooked rice, chicken broth, sour cream, 3/4 cup of the cheddar cheese, milk, onion powder, garlic powder, and pepper. If you are using broccoli, mix it in now.
  3. Stir all the ingredients together until they are well mixed.
  4. Spread the mixture evenly into your prepared baking dish.
  5. Cover the dish tightly with aluminum foil.
  6. Bake for 45 minutes.
  7. Remove the foil and sprinkle the remaining 1/4 cup of cheddar cheese over the top.
  8. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the rice is tender.
  9. Let the cheesy chicken and rice casserole rest for 5 minutes before you serve it.

Notes

  • If you use leftover cooked chicken, this recipe comes together very quickly.
  • For an extra layer of flavor, mix 1/2 cup of crushed butter crackers with 1 tablespoon of melted butter and sprinkle over the cheese during the last 10 minutes of baking.
  • This recipe works well as a Crockpot Cheesy Chicken and Rice; cook on low for 4 hours, then top with cheese and bake briefly if your slow cooker has an oven-safe insert.
