Make a rich and creamy cauliflower soup featuring roasted garlic and sharp cheddar cheese. This recipe is simple to prepare and yields a velvety texture.

Ingredients

Scale
  • 1 large head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 cup sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cauliflower florets with half the olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until tender and lightly browned.
  2. While the cauliflower roasts, heat the remaining olive oil in a large pot over medium heat. Add the onion and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the roasted cauliflower and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  4. Remove the pot from the heat. Use an immersion blender or carefully transfer the soup in batches to a regular blender. Blend until completely smooth and creamy.
  5. Return the soup to the pot over low heat. Stir in the heavy cream and nutmeg.
  6. Gradually stir in the shredded cheddar cheese until it melts completely and the soup is smooth. Do not let the soup boil after adding the cheese.
  7. Taste and adjust salt and pepper as needed before serving.

Notes

  • For a low-carb or keto version, skip adding any flour or thickeners and rely on the blended cauliflower for body.
  • If you prefer a dairy-free soup, substitute the heavy cream with full-fat coconut milk and use a sharp, aged vegan cheddar alternative or nutritional yeast for cheesiness.
  • Roasting the cauliflower and garlic first develops a deeper, sweeter flavor profile compared to boiling them.
