Ingredients
Scale
4 cups fresh or frozen blackberries
2 cups water
1 cup granulated sugar, divided (plus extra for sprinkling)
1 tablespoon lemon juice
1/4 teaspoon salt
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold unsalted butter, cut into small pieces
1/2 cup milk
Instructions
Combine blackberries, water, 3/4 cup of the sugar, lemon juice, and 1/4 teaspoon salt in a large, heavy-bottomed pot or Dutch oven. Bring the mixture to a simmer over medium heat, stirring gently until the sugar dissolves. Reduce heat to low and let it gently bubble while you prepare the dough.
In a medium bowl, whisk together the flour, baking powder, and 1/2 teaspoon salt for the dough.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Pour in the milk and stir just until the dough comes together. Do not overmix; the dough will be slightly sticky.
Drop the dough by rounded tablespoons directly onto the simmering blackberry mixture. Space them out slightly.
Cover the pot tightly and cook on low heat for 15 minutes without lifting the lid. This allows the dumplings to steam and cook through.
While the dumplings steam, mix the remaining 1/4 cup sugar with 1 tablespoon of extra sugar in a small bowl.
After 15 minutes, gently uncover the pot. Sprinkle the reserved sugar mixture over the dumplings and the syrup.
Cover again and cook for 5 more minutes on low heat.
Remove from heat and let stand, covered, for 5 minutes before serving warm.
Notes
Serve these warm Blackberry Dumplings immediately in bowls.
For the best experience, top each serving with a scoop of vanilla ice cream or a drizzle of heavy cream.
If using frozen blackberries, do not thaw them before adding them to the pot.
