Make soft, chewy pretzel dough wrapped around hot dogs using a simple baking soda bath for authentic flavor and color. This recipe yields great game day snacks or kid-friendly dinners.

Ingredients

Scale
  • 1 1/2 cups warm water (about 110°F)
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 teaspoon granulated sugar
  • 3 3/4 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup baking soda
  • 8 cups water (for boiling bath)
  • 8 all-beef hot dogs or franks
  • 1 large egg, beaten
  • Coarse pretzel salt, for topping

Instructions

  1. In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes until foamy.
  2. In a separate bowl, whisk together the flour and salt. Add the melted butter to the yeast mixture. Gradually add the flour mixture to the wet ingredients, mixing until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 5 to 7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  4. While the dough rises, prepare the boiling bath: In a large, shallow pot, bring 8 cups of water and the 1/2 cup of baking soda to a rolling boil.
  5. Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a rope about 10 inches long.
  6. Wrap one dough rope around each hot dog, overlapping slightly and pinching the ends to seal.
  7. Carefully lower 2 or 3 pretzel dogs at a time into the boiling baking soda water. Boil for 30 seconds on each side. Remove with a slotted spoon and place them on a baking sheet lined with parchment paper.
  8. Preheat your oven to 425°F (220°C).
  9. Brush the boiled pretzel dogs with the beaten egg and sprinkle generously with coarse pretzel salt.
  10. Bake for 12 to 15 minutes, or until deep golden brown. Serve warm with your favorite dipping sauces.

Notes

  • For an air fryer version, cook the salted pretzel dogs at 375°F (190°C) for 8 to 10 minutes, checking frequently for doneness.
  • For easy dipping sauces, mix equal parts mayonnaise and yellow mustard for a quick honey mustard, or melt cheddar cheese with a splash of milk for a simple cheese sauce.
  • If you want mini pretzel dogs, cut the hot dogs into thirds before wrapping them with smaller pieces of dough.
