Ingredients
Scale
1 1/2 cups strong brewed espresso or coffee, cooled
1/4 cup coffee liqueur or dark rum (optional)
2 large egg yolks
1/2 cup granulated sugar
16 ounces mascarpone cheese, cold
1 1/2 cups heavy whipping cream, cold
1 teaspoon vanilla extract
1 package (7 ounces) ladyfingers (Savoiardi)
Unsweetened cocoa powder, for dusting
Instructions
Prepare the coffee mixture: In a shallow dish, combine the cooled espresso (or coffee) and the coffee liqueur or rum, if using. Set aside.
Make the cream base: In a medium bowl, whisk the egg yolks and sugar together until the mixture is pale yellow and thick. This takes about 3 minutes.
Add the mascarpone: Gently whisk the cold mascarpone cheese into the egg yolk mixture until just combined and smooth. Do not overmix.
Whip the cream: In a separate, clean bowl, use an electric mixer to whip the heavy cream and vanilla extract until stiff peaks form.
Fold together: Gently fold one-third of the whipped cream into the mascarpone mixture to lighten it. Then, fold in the remaining whipped cream until no white streaks remain. You now have the mascarpone cream.
Assemble the first layer: Quickly dip each ladyfinger, one at a time, into the coffee mixture for just 1-2 seconds per side. Do not let them soak too long or they will become mushy. Arrange the dipped ladyfingers in a single layer in the bottom of an 8×8 inch baking dish or similar serving dish.
Layer the cream: Spread half of the mascarpone cream evenly over the ladyfingers.
Repeat layers: Dip and arrange a second layer of coffee-soaked ladyfingers on top of the cream. Spread the remaining half of the mascarpone cream over the second layer of ladyfingers.
Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
Serve: Before serving, use a fine-mesh sieve to generously dust the top surface with unsweetened cocoa powder. Slice and serve cold.
Notes
For a non-alcoholic version, simply omit the coffee liqueur or rum and use only strong coffee.
Use high-quality, strong brewed espresso for the best flavor penetration into the ladyfingers.
Make sure your mascarpone and heavy cream are very cold for proper whipping and stability.
You can assemble this dessert in individual glasses or ramekins instead of a large dish.
