Enjoy a taste of Oktoberfest with this hearty Beer-Braised Bratwurst with Onions recipe. Perfect for a festive gathering or a cozy night in, this dish brings comforting German flavors to your table.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 2 pounds bratwurst sausages
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried marjoram
  • 1 (12 ounce) bottle lager beer
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add sliced onions and cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
  2. Add bratwurst to the pot and brown on all sides. Remove bratwurst and set aside.
  3. Add minced garlic, caraway seeds, and marjoram to the pot. Cook for 1 minute until fragrant.
  4. Pour in the lager beer and chicken broth. Stir in Dijon mustard. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Return the bratwurst to the pot, ensuring they are mostly submerged in the liquid. Season with salt and pepper.
  6. Cover the pot and let it simmer gently for 20-25 minutes, or until the bratwurst are cooked through and the onions are very tender.
  7. Serve the bratwurst and onions hot, spooning some of the braising liquid over the top.

Notes

  • For an authentic Oktoberfest feel, serve with crusty bread, sauerkraut, and mustard.
  • You can use a darker beer like a Märzen or Bock for a richer flavor.
  • If you don’t have a Dutch oven, a large oven-safe skillet with a lid will also work.
