Ingredients
Scale
2 cups cooked, shredded chicken breast
2 ripe avocados, mashed
1/4 cup plain Greek yogurt (optional, for extra creaminess and protein)
2 tablespoons fresh lime juice
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1 tablespoon chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the shredded chicken in a medium mixing bowl.
In a separate small bowl, mash the ripe avocados until mostly smooth. Stir in the Greek yogurt, if using.
Add the mashed avocado mixture to the chicken.
Pour in the fresh lime juice. Stir everything together until the chicken is evenly coated and creamy.
Fold in the chopped celery, red onion, and cilantro.
Season the salad with salt and pepper. Taste and adjust seasonings as needed.
Serve immediately, or cover and chill for at least 30 minutes for best flavor integration. This is a great low-carb lunch idea.
Notes
For the best texture, use very ripe avocados. If you prefer a thinner consistency, add a teaspoon of water or extra lime juice.
