Ingredients
Scale
1 package (2 sheets) puff pastry, thawed
2 large apples, peeled, cored, and diced
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
1 tablespoon lemon juice
1 egg, beaten (for egg wash)
1 tablespoon coarse sugar, for sprinkling
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Toss gently to coat the apples evenly.
Unfold the puff pastry sheets onto a lightly floured surface. Cut each sheet into four equal squares.
Spoon about 2 tablespoons of the apple filling onto the center of each puff pastry square.
Brush the edges of the pastry with the beaten egg wash. Fold the pastry over the filling to create a triangle or rectangle, pressing the edges to seal. You can use a fork to crimp the edges for a decorative finish.
Place the turnovers onto the prepared baking sheet.
Brush the tops of the turnovers with the remaining egg wash and sprinkle with coarse sugar.
Bake for 20-25 minutes, or until the turnovers are golden brown and puffed.
Let them cool slightly on a wire rack before serving.
Notes
For extra flavor, you can add a pinch of allspice or ginger to the apple filling.
If you don’t have coarse sugar, granulated sugar will also work for sprinkling.
These turnovers are wonderful served warm with a scoop of vanilla ice cream.
