Make easy, baked apple fritter bites spiced with cinnamon and topped with a simple cider glaze. This recipe avoids deep frying.

Ingredients

Scale
  • 2 large apples, peeled, cored, and finely diced
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 3 tablespoons apple cider

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, whisk the granulated sugar and egg until pale. Add the milk, melted butter, and vanilla extract, mixing until just combined.
  4. Add the dry ingredients to the wet ingredients. Mix gently until just combined; do not overmix the batter.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean. Let the bites cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the glaze: Whisk the powdered sugar and apple cider together in a small bowl until smooth. Add more cider, one teaspoon at a time, if the glaze is too thick.
  9. Drizzle the cider glaze over the cooled apple fritter bites before serving.

Notes

  • For a crispier exterior, you can lightly brush the tops of the batter with melted butter before baking.
  • If you do not have apple cider for the glaze, use milk or water with a drop of vanilla extract instead.
  • You can use any firm apple variety, such as Honeycrisp or Granny Smith.
