Enjoy crispy zucchini fries without the guilt of deep frying. These air fryer zucchini fries are a healthy and delicious way to enjoy a favorite snack.

Ingredients

Scale
  • 1 pound zucchini
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and trim the ends of the zucchini. Cut each zucchini into 3-4 inch sticks, about 1/2 inch thick.
  3. Set up three shallow bowls. In the first bowl, add the flour. In the second bowl, whisk the eggs. In the third bowl, combine the panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  4. Dredge each zucchini stick first in the flour, shaking off any excess.
  5. Dip the floured zucchini stick into the whisked eggs, letting any excess drip off.
  6. Coat the egg-dipped zucchini stick generously with the panko breadcrumb mixture, pressing gently to help the crumbs adhere.
  7. Place the coated zucchini fries in a single layer in the air fryer basket. You may need to cook in batches.
  8. Lightly spray the fries with cooking spray.
  9. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  10. Serve immediately with your favorite ranch dressing.

Notes

  • For extra crispy fries, you can double-coat the zucchini by dipping them in egg and then panko again.
  • Feel free to experiment with different seasonings in the breadcrumb mixture, such as Italian seasoning or cayenne pepper for a little heat.
  • If you don’t have panko breadcrumbs, regular breadcrumbs can be used, but the texture might be slightly different.
