Make thin, breaded pork cutlets in the air fryer that achieve a satisfying crunch similar to traditional frying.

Ingredients

Scale
  • 4 thin-cut pork loin cutlets (about 1/4 inch thick)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional, for extra crisp)
  • 1 tablespoon olive oil or cooking spray
  • Lemon wedges, for serving

Instructions

  1. Pound the pork cutlets between two sheets of plastic wrap until they are uniformly thin, about 1/8 to 1/4 inch thick. Season both sides lightly with salt and pepper.
  2. Set up a standard breading station with three shallow dishes. Place the flour in the first dish. Mix the beaten eggs in the second dish. Combine the Panko breadcrumbs and Parmesan cheese (if using) in the third dish.
  3. Dredge each cutlet first in the flour, shaking off any excess. Dip the floured cutlet into the egg mixture, allowing excess to drip off. Finally, press the cutlet firmly into the Panko mixture to coat both sides completely.
  4. Lightly spray the air fryer basket with cooking oil or brush the cutlets with 1 tablespoon of oil total. Arrange the breaded cutlets in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding.
  5. Air fry at 380°F (195°C) for 8 to 10 minutes, flipping the cutlets halfway through the cooking time.
  6. Check the internal temperature; the pork should reach 145°F (63°C) and the coating should be golden brown and crisp.
  7. Serve immediately with fresh lemon wedges.

Notes

  • For the best crunch, use Panko breadcrumbs instead of standard breadcrumbs.
  • Do not skip the step of pressing the breadcrumbs firmly onto the meat; this helps them adhere and crisp up.
  • Cooking in a single layer is essential for air circulation and achieving uniform crispiness.
