Ingredients
Scale
1 cup cooked, shredded chicken
1/2 cup Buffalo sauce (use your preferred brand)
4 ounces cream cheese, softened
1/4 cup shredded Monterey Jack cheese
10 small corn tortillas (or flour tortillas)
1 tablespoon vegetable oil or avocado oil
Cooking spray (oil-based)
Instructions
In a medium bowl, combine the shredded chicken, Buffalo sauce, softened cream cheese, and Monterey Jack cheese. Mix until the filling is uniform.
Warm the tortillas slightly in the microwave for 15-20 seconds to make them pliable. This prevents cracking.
Place about 2 tablespoons of the filling near one edge of a tortilla.
Roll the tortilla tightly around the filling to form a taquito shape. Secure the seam with a toothpick if necessary to prevent unrolling.
Lightly brush the outside of each taquito with the vegetable oil.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 3 minutes.
Arrange the taquitos in a single layer in the air fryer basket, ensuring they do not touch. Work in batches if needed.
Lightly spray the tops of the taquitos with cooking spray for extra crisping.
Air fry for 8 to 10 minutes, flipping them halfway through the cooking time. Check at 8 minutes; they are done when they are golden brown and very crispy.
Remove the toothpicks before serving.
Notes
For the crispiest results, use corn tortillas and ensure you lightly coat them with oil before air frying.
If your taquitos are not holding their shape, roll them tightly and secure them with a toothpick inserted lengthwise through the seam.
Serve immediately with blue cheese dressing or ranch dressing for dipping.
