Learn how to make the best air fryer baked potato with perfectly crispy skin and a light, fluffy interior. This fast method is ideal for quick weeknight meals or as a simple holiday side dish.

Ingredients

Scale
  • 4 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Scrub the Russet potatoes well under running water to remove any dirt. Dry them completely with a paper towel; moisture prevents crisping.
  2. Using a fork, pierce each potato deeply 6 to 8 times all over. This allows steam to escape, which is key for a fluffy inside.
  3. In a small bowl, mix the olive oil, coarse salt, pepper, and garlic powder, if using.
  4. Rub the oil mixture evenly over the entire surface of each potato, making sure the salt adheres well to the skin.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the seasoned potatoes in the air fryer basket in a single layer. Do not overcrowd the basket; work in batches if necessary.
  7. Air fry for 30 to 35 minutes, flipping the potatoes halfway through the cooking time. The exact time depends on the size of your potatoes and your air fryer model.
  8. Check for doneness by inserting a fork or knife into the center; it should slide in with no resistance. The skin should look deeply golden and crisp.
  9. Remove the potatoes from the air fryer. Slice them open lengthwise immediately and gently fluff the inside flesh with a fork.

Notes

  • For extra crispy skin, after the initial cook time, lightly brush the skins again with a tiny bit of oil and air fry for an additional 3-5 minutes at 400°F.
  • These potatoes are excellent bases for loaded baked potatoes. Try toppings like sharp cheddar cheese, crumbled bacon, sour cream, and fresh chives.
  • This is the fastest baked potato method, saving you significant time compared to oven baking.
  • If you are making these for a large gathering, consider using the air fryer to cook them while your oven is busy with the main course.
